Iconic fine dining restaurant direct from Mumbai will receive a quintessentially English spin; specialising in traditional northern Indian cuisine, the new venue will have capacity for 210 guests; high-profile fans of the concept include Sir Paul McCartney, Aamir Khan and the Kuwait Royal Family
Indian food is one of the most popular cuisines in Britain, which is why it’s only natural for English hospitality brand DUKES to be bringing the best of Indian fine dining to the stellar line-up of restaurants at its upcoming property on Palm Jumeriah in Dubai.
Khyber at DUKES Dubai was officially announced at a signing between Abdulla Bin Sulayem, CEO, Seven Tides International and Sudheer Bahl, Owner of Khyber, which took place at DUKES Dubai last week. The partnership marks the dining concept’s first franchise outside of India.
“We are thrilled to be bringing Khyber to Dubai for the first time and are positive that its blend of traditional, high-end cuisine served in an virbant atmosphere will make a stand out addition to the emirate’s dining scene,” said Abdulla Bin Sulayem, CEO, Seven Tides International. “We are working closely with the Khyber family to ensure the new restaurant captures the true essence of the concept and look forward to welcoming guests for dinner when the hotel opens later this year.”
Direct from Mumbai, Khyber at DUKES Dubai will specialise in traditional northern Indian cuisine that is best described as Ambrosia – the food of all the gods. It will be carefully crafted by an experienced Indian head chef and the venue will boast the ethnic style of the flagship Khyber restaurant, located in the arts and heritage disctrict of the capital.
“Khyber has been the family business for more than 60 years and we have experienced tremendous success thanks to our unrivalled take on northern Indian cuisine,” added Sudheer Bahl, Owner, Khyber. “Entering the UAE for the first time is an important step for us in terms of international growth and, with the help and guidance of Seven Tides, we are sure to make it a big success.”
Khyber at DUKES Dubai will be located on the 15th floor of the hotel where guests can enjoy a 180-degree view that takes in Burj Al Arab and the Dubai Marina skyline. The venue will have capacity for up to 210 guests, including up to 60 diners on the terrace.
“We will be putting our stamp on popular dishes such as Tandoori Raan, a tender leg of baby lamb marinated with spices and cooked in a clay oven, and Milky Way, a galaxy of saffron pearls on a bed of condensed sweetened milk,” said Martin Cahill, Executive Chef at DUKES Dubai, who will be overseeing the culinary operations. “There will be a selection of vegetarian and non-vegetarian dishes available to delight even the most discerning palettes of Indian fine dining enthusiasts.”
Established in 1958, Khyber Mumbai has risen to international acclaim thanks to its delicious, premium quality cuisine. What started as a 50 cover restaurant now has capacity for up to 300 diners and the eatery counts high profile guests including Sir Paul McCartney, Richard Gere, Demi Moore, Aamir Khan and the Kuwait Royal Family among its fans. يعزز فندق ديوكس دبي المقرر افتتاحه في جزيرة النخلة الجميرا في وقت لاحق من العام الحالي سلسلة مطاعمه التي يضمها في اجوائه الانجليزية المميزة بمطعم هندي راق شهير من منطلق شهرة المطاعم الهندية في بريطانيا.
وتم رسميا الاعلان عن انضمام مطعم خيبر لفندق ديوكس دبي خلال حفل توقيع الاتفاقية بين عبدالله بن سليم الرئيس التنفيذي لشركة سيفن تايدز انترناشيونال وسودير بال مالك مطعم خيبر والذي أبرم في ديوكس دبي الاسبوع المنصرم، وسيكون اتفاق الامتياز هذا الأول لخيبر خارج الهند.
وقال بن سليم:" يسرنا استقطاب خيبر الى دبي للمرة الأولى ونحن على ثقة ان هذا المطعم الفريد والراقي بأجوائه النابضة بالحياة سيكون علامة فارقة لقطاع المطاعم في دبي، ونحن نعمل على قدم وساق مع اسرة مطعم خيبر ليعبر المطعم الجديد عن الروح الحقيقية والاصيلة التي يتميز بها في موطنه ونتطلع للترحيب بالضيوف لتناول اشهى المأكولات فيه عندما يتم افتتاح الفندق هذا العام".
وسيتخصص خيبر في ديوكس دبي القادم مباشرة من مومباي بالمطبخ التقليدي لشمال الهند الذي يعرف بالأمبروسيا او طعام جميع الآلهة والذي سيتولى الاشراف على تحضير اطباقه بعناية شيف هندي محنك فيما سيتميز المكان بالاسلوب الإثني لمطعم خيبر الرئيسي الواقع في منطقة الفنون والتراث لأكبر مدن الهند.
وقال سودير بال مالك مطعم خيبر:" تمتلك عائلتنا مطعم خيبر منذ اكثر من ستين عاما وقد حققنا نجاحا ساحقا بفضل تميز مطبخ شمال الهندي الذي لا يضاهى، وبالتالي فإن دخولنا لدولة الامارات العربية المتحدة لأول مرة يعتبر خطوة مهمة لنا من ناحية نمونا على المستوى العالمي بمساعدة ومشورة سيفن تايدز الامر الذي من المؤكد ان يحقق نجاحا كبيرا".
وسيقع خيبر في ديوكس دبي في الطابق الخامس عشر من الفندق حيث يمكن للضيوف التمتع بإطلالة بانورامية على برج العرب ومرسى دبي وسيتسع المطعم لـ120 ضيفا بما في ذلك 60 ضيفا في الشرفة.
وقال مارتن كاهيل الشيف التنفيذي في ديوكس دبي الذي سيشرف على عمليات المطاعم:"ستكون لنا بصمتنا الخاصة على الاطباق الشهيرة مثل "التندوري ران" وهو عبارة عن فخذة ضأن متبلة بالتوابل والتي تطهى في فرن فخار والـ"ميلكي واي" وهي عبارة عن مجرة من لآلىء الزعفران المفروشة على طبقة من الحليب المكثف المحلى. وسيكون هناك ايضا خيارات من الاطباق النباتية وغير النباتية التي ستدخل البهجة على قلب حتى أكثر الذواقة تطلبا للمطبخ الهندي الراقي".
وحقق مطعم خيبر الذي تأسس سنة 1958 شهرة عالمية بفضل مطبخه اللذيذ والراقي والنوعي حيث ابتدأ بطاقة 50 ضيفا وتصل الآن الى 300 ضيف فيما استقبل الكثير من المشاهير ومنهم سير بول مكارتني وريتشارد غير وديمي مور وامير خان والاسرة الحاكمة في الكويت. ونال المطعم الكثير من الجوائز المرموقة ومنها جائزة افضل المطاعم الراقية في الهند والترتيب السادس في "جوائز تريب ادفايزوز ترافيلر تشويش 2015" وجوائز "انا اكلت هنا"، وجائزة "افضل كباب" وجائزة مومباي من موقع "ماوثشط" الالكتروني في 2014-2015 وجائزة "ليجندري" من "دليل الذواقة للمطاعم"، زوماتو سنة 2013.
والفندق المقرر افتتاحه في الربع الأخير من العام الحالي يقع وسط جذع جزيرة النخلة جميرا على بعد 10 دقائق فقط من مرسى دبي وشارع الشيخ زايد و45 دقيقة فقط عن مطار دبي الدولي. ومن المتوقع ان يضيف فندق وشقق ديوكس دبي نكهة بريطانية مميزة على المشهد الفندقي الفخم في المدينة.
يتكون الفندق من 279 غرفة و227 شقة فندقية توفر مستوى عالمي من الراحة والفخامة ومرافق الاجتماعات والترفيه بما فيها الشاطئ الخاص المذهل والمسبح الداخلي والمسبح الخارجي الممتد وصالة اللياقة البدنية المتطورة إضافة الى عدد من المطاعم والمقاهي.
